Yeah actually, one place had this tiny handwashing sink right next to the prep area and I wasn’t sure if that was up to code or just a weird layout.
Great observation — that’s actually a perfect entry point. Arizona health code requires a dedicated handwashing sink within reach of every food prep area. The fact that it was small doesn’t matter; what matters is that it’s separate from your prep sinks.
